COCKLES, CLAMS, MUSSELS AND CUTTLEFISH
A sea vegetable and shellfish minestrone, nori and sesame seed pesto, cuttlefish tagliatelle, roast prawn and saffron oil.

CRAB CAKE
Pan fried crab cake, harrisa crab and lime mayonnaise, mango salsa, pickled jalapeno. coriander and yoghurt dressing.

ORGANIC SALMON
A warm salad of beetroot salmon, crispy horseradish and dill croquette, compressed cucumber. smoked salmon mousse, avocado, radish and fennel.

HERRING
Pickled herring, celeriac cream, apple and furikake dashi, parsley and smoked eel puree, soused onions, warm potato bread.

SCALLOPS
Caramelised scallops, bramley apple sauce, maple glazed bacon, crispy popcorn crackling, black pudding sauce.

COD

Skrei cod with a chicken and bacon crumb, chicken skin crisp, roast hispi cabbage, bacon fat leeks, hazelnut and rosemary crumble, white onion and parmesan espuma, roast chicken juices.

STEAK, OYSTER AND GUINNESS
Steak and oyster pudding made with Guinness suet pastry. beef fat and thyme hasselback potatoes, buttered calvo nero, red wine sauce, crispy IPA onions.

LOBSTER
A lobster lasagne, with a leek and white crab ragout, trumpet mushrooms, tender stem broccoli, heritage carrots, lobster sauce and grated aged parmesan.

MONKFISH
Buttermilk, honey and saffron marinated monkfish, baked aubergine and prawn curry, Bombay swede, preserved lemon, black pepper and coriander raita, mango chutney, onion bhaji.

Baked smoked haddock, ashmore rarebit, kale and onion colcannon finished with bacon butter, wilted spinach leaves, poached poulets egg, pommery mustard sauce.
